Smoked Salmon Tartlets

You will need:

           

Deluxe Mini Muffin Pan
– £18.50

Ingredients
1 Block of Ready to Roll Short Crust Pastry
½ A Red Pepper (Chopped)
3 Mushrooms (Chopped)
3oz Smoked Salmon Trimmings
2tsp Sweet Chilli Sauce
1 Small Onion (Chopped)
4tbsp Mayonaise

Method
1.Preheat the oven to 180°C/fan 160°C/Gas mark 5.
2.Unwrap the pastry and place it on the Cutting Board. Cut ¼ from the block using the Forged Utility Knife. Set it to one side as it is not needed.
3.Score the pastry block into 24 even squares using the Forged Utility Knife.
4.Cut along the scored marks into 24 cubes.
5.Roll each square into a ball and place one in each section of the Deluxe Mini Muffin Pan.
6.Dip the Mini Tart Shaper into the flour and press it onto the balls of pastry, and twist to form mini tartlet shells.
7.Mix all the other ingredients together in the Small Batter Bowl using the Mix ‘N Scraper.
8.Using the Small Scoop fill the tart shells with salmon mixture (about ¾ full).
9.Bake for 20-25 minutes.
10.Once finished, remove from the Mini Muffin Pan before they cool.

Chicken, Avocado & Lemon Pizza

Chicken, Avocado & Lemon Pizza
Recipe

Sunflower oil, for greasing
1/2 packet (290 g) pizza base mix
About 125 ml warm (hand hot) water
50 g mature Cheddar cheese
50 g Red Leicester cheese
100 g skinless, boneless cooked chicken, diced
1 plum tomato
1/4 small red onion
1 small avocado
1 lemon
3 rashers lean back bacon (about 75 g in total), chopped, cooked & drained (optional, see Chef’s Corner)

Preheat oven to 220°C/fan 200°C/Gas 7. Lightly brush Medium Bar Pan with sunflower oil using Chef’s Silicone Basting Brush; set aside. Place pizza base mix (use 1 sachet only) in Classic Batter Bowl; add enough warm water, mixing to form a soft dough. Knead dough on lightly floured surface 5 minutes or until smooth. Place pizza dough onto centre of prepared bar pan; roll dough out to cover base of pan using Baker’s Roller®. If necessary, gently ease dough 5 mm up edges of pan using fingertips, so that edges are slightly higher than base. Set aside in warm place 15 minutes.

Using Rotary Grater, grate cheeses into (500-ml) Easy Read Measuring Cup. Scatter diced chicken over pizza base; sprinkle with cheese. Bake 18-20 minutes or until base is crisp and golden brown; remove from oven to Stackable Cooling Rack.

Meanwhile, slice tomato in half lengthways using Utility Knife; remove seeds using Core & More and dice flesh. Thinly slice onion. Cut avocado in half lengthways using Utility Knife, avoiding stone; twist halves apart and remove stone. Cut halves into quarters and remove peel; dice avocado flesh and place into Small Batter Bowl. Add tomato and onion to avocado. Juice lemon to measure 2-3 tablespoons juice; add to batter bowl to taste and stir gently using Small Mix ‘N Scraper®.

Distribute avocado mixture evenly over warm pizza. Sprinkle with cooked bacon, if desired. Cut pizza into portions with Pizza Cutter. Serve using Mini-Serving Spatula.

Yield: Serves 8-12

Per serving: (serving 12): Energy 812kJ/193kcal; Protein 7.9g; Carbohydrate 24.4g; Fat 7.8g; Saturated Fat 2.5g; Fibre 1.3g; Salt 0.5g

Cook’s Tip: This recipe serves 4 as a light lunch or serves 2-3 as a main course.

To cook bacon, cut rashers into small pieces using Kitchen Shears. Heat 1 teaspoon sunflower oil in 20-cm Sauté Pan over medium heat until hot; add bacon and cook 3-4 minutes or until crisp and browned, turning frequently using Small Slotted Turner. Remove from pan; drain on kitchen paper.

Super Quick Chocolate Prep Bowl Cakes (Egg Free)

Such a quick way to whip up a quick pud. I like to serve it straight from the bowl with a dollop of cream or ice cream. And its egg free too so perfect for anyone with egg allergies who cannot eat ‘ordinary’ cake

Makes 2 small cakes

4 tablespoons cocoa powder
4 tablespoons unbleached all-purpose flour
4 tablespoons sugar
1/2 teaspoon baking powder
6 tablespoons milk
2 tablespoon sunflower oil
1 teaspoon pure vanilla extract

1. In the classic batter bowl, whisk together the cocoa powder, flour, sugar and baking powder until well mixed. Add the milk, oil and vanilla, whisking just until smooth and there are no lumps.
2. Scoop mixture into 2 prep bowls using the mix ‘n’ scraper, place in the microwave and cook on high for around 50 seconds , depending on the power of your microwave (mine is 1000 watts). The cake is perfect if it’s cooked but still has some slightly gooey areas, if it’s cooked too thoroughly it can go a bit dry & difficult to swallow!
3. Let cake sit for 5 minutes before eating……(OR if you can’t wait serve hot with a dollop of vanilla ice-cream!)
